An epicurean by nature, André founded a specialized retail beer business in 2004. A great beer enthusiast, he successfully shared his passion with countless customers through sales advice, tasting seminars in hospitality schools, and even on television. All of this was done to lend a hand and contribute in his own way to the rise of microbreweries in Quebec.
His taste for adventure and numerous travels have allowed him to discover a culinary culture far different from the well-known North American sweet/salty flavors. We all know that spiciness is a part of centuries-old culinary traditions in many civilizations. But why? Where does this heat come from, and what are its benefits?
Quebecers’ tastes have evolved. Yesterday, we drank sacramental wine; today, we’re enjoying fine vintages. We’ve gone from processed cheese slices to tomme cheese made from the same flock of sheep, from room-temperature beer to world-class brews! We still love sweet and salty flavors, but we’ve grown to appreciate more spicy, fragrant, tangy, sometimes bitter, and even fiery tastes!
His research led him to conclude that there’s no harm in a little bit of "pain"... Spiciness offers a wide range of colors and flavors—sometimes subtle, sometimes absolutely insane! Today, I’m partnering with a team of professionals, including chefs who gently ferment peppers, as well as an expert in e-commerce, to make it easier for you to access this fascinating world of heat, wherever you may be.
